I've been craving something for forever.  FOR.EV.ER. (Sandlot Style).  I've been craving some peanut sauce.  Any way I can get it.  I've had this Jade Peanut Sauce for a long long time and have been dying to use it again.  But I didn't want to make a noodle dish... I'm sort of "pasta'd-out" (yes, I know that's not a word).  So instead I thought I'd go with a pizza.  This pizza is so great because it is so easy to make, super versatile, and quick (and muy delicioso!).
 
 
Well, as some of you may already know through twitter, my boyfriend surprised me with a trip this Christmas.  He also surprised me with a trip last Christmas (to VEGAS, and the Grand Canyon) but you probably don't know about that because I hadn't started blogging (or tweeting) then.  This year he decided to go bigger... a longer trip, a longer flight and an awesome location...

I won't gush about all of the details of the gift (which includes a LOST tour) but I will say that it involved a slideshow. And that said slideshow was password protected with the code being: 4 8 15 16 23 42 (and then press EXECUTE).  I just love that man.  

So anyway, now that the time for resolutions is upon us, and my trip is happening in February, I am working to continue with exercising regularly and eating a bit healthier (ignore the fact that my last post was about cookies...I exercised restraint people, I swear).  So I decided to take a traditional winter classic and give it a healthy spin, and that's how this hot chocolate was born...

The Elements:
1 cup non-fat skim milk
1 scoop EAS Chocolate protein powder (or an alternative if you have a favorite kind already)
A steamer of some sort (or you could alternatively microwave your milk)

Procedure:
Steam the milk, then mix the protein powder in to the hot milk, stirring until it is fully incorporated

The Verdict: 
Honestly I thought it was almost as good as the real thing.  Now when I say "the real thing" I mean real chocolate shavings and not the crushed powder that you buy at the store.  If you are used to the powder, than I would say that this is just as good!  Love it.  Easy and I don't have to feel guilty eating it.  Bring on the bikini! (Okay not quite there yet, but getting there!)  EAS powder is a great choice because it is 23g of protein with 130 calories and only 3 carbs!  Other protein powders may work just as well, this one I just love because it tastes fantastic and is very versatile (I also love to mix it in a blender with 1 cup vanilla or regular soy milk to make a healthy chocolate milk!)

These are some of mine:
  • keep working out regularly and eating smart
  • create more time for the things I really love, like maintaining this blog and developing recipes
  • make more videos for the blog, such as the one I did here
  • make the following things at some point this year: pork belly, foie gras, braised lamb, and attempt some surprises I have up my sleeve
  • try making some things I haven't done before--I'm currently working on a list of things to try in 2012 with my beautiful and talented friend Marnely from Cooking with Books.  So far we would like to do the following: pork belly (as mentioned above), pate, fresh lobster (meaning, still alive, not just tails), something involving molecular gastronomy, shuck oysters (and other shellfish), filet a whole fish, learn to perfectly cook steaks to all temperatures, and how to butcher beef properly.
 
 
Wow.  I'm astonished how long it has been since I have posted.  I have been so insanely busy that I barely have time to breathe, let alone cook and then BLOG about it.  Sometimes I just don't have the energy but usually it's more just because I'm not even at my computer.  So usually on days like that I just want to be able to come home and whip up something fast and simple.  I have made these turkey burgers about 4-5 times and I love them every time.  I started making them as a healthy alternative to a beef burger and also decided to make them sans bun!  I really like them and I think you will too!  So make some for yourself on a busy weeknight or even on a relaxed Sunday, but let me know how you like them!

I don't know about you guys, but my schedule has been CRAZY hectic lately.  Between working for the judge, volunteering at Legal Aid and working at Williams-Sonoma, my week is pretty much jam-packed.  I am always looking for good meals to make that take as little time as possible.  This turned out to be a great alternative to packing a sandwich for lunch.  I made this the night before, refrigerated it overnight, and just packed the olive oil in a separate tiny container.  Then, the next day for lunch, I just mixed in the olive oil and voila! Easy peasy lunch!

I made this pizza like 3 months ago and have just now posted about it.  Jeez what is wrong with me?  I should have told you all about this earlier.  When I made this, I had just returned from my grandmother's funeral and I was in the midst of studying for the Bar Exam so I didn't post it as soon as I should have and then all these other exciting recipes distracted me.  Truth be told, I thought the pizza was a bit rich and I wasn't sure if I would love it enough to share.  I think (as you will see from the verdict) that this would be better served as an appetizer for a group of people and not as a main course for one person.  It was delicious and flavorful.  I knew I wanted to combine goat cheese and figs and added the onions as a little bit of an extra oomph.  I went off of the recipe from Smitten Kitchen for Ricotta and Onion Pizza to make the recipe and then added my own flare.  It doesn't look all that pretty but don't judge a book by it's cover (or in this case, a pizza by it's dark caramelized onions!)... I hope you like it!

Well, it's almost the weekend!  Now that I have been working for a whole week, I feel like I kind of understand the whole TGIF thing.  I am definitely not a morning person and so this week, my breakfast has basically revolved around cereal and oatmeal.  So this weekend, I am looking forward to breaking out the eggs and having a real breakfast.  I made this frittata a couple of weeks ago but due to various things keeping me very busy, I have been terribly negligent about posting.  I won't take up too much of your time but I will tell you that this was definitely a fantastic breakfast and would make a great breakfast over the long weekend!

When I was a kid, one of my au pairs, Anna, was from Sweden.  She used to make these phenomenal Swedish meatballs for me and I have been itching to cook these ever since I launched this blog.  Whenever I see Swedish meatballs in restaurants, however, they are meatballs covered in gravy... definitely not the way Anna used to make them.  she and I are still quite close and so I finally asked her if I could have the recipe.  She sent me a link to a general recipe and gave me some suggestions as to substitutions.  She used to serve these with mashed potatoes but Matt isn't too wild about mashed potatoes so I decided to bake them in the oven in "coins".  They were crispy and delicious, but some mashed potatoes would have also been a nice addition as well (you could also do both!).  So here they are: real Swedish Meatballs!

Yesterday was Matt's birthday.  I won't tell you how old he is, but I will tell you that one of his absolute favorite meals is spaghetti with meat sauce.  He makes it multiple times per week.  Truth be told, this is actually why I started cooking.  I don't like to eat the same thing over and over again and I thought I could find new things that he would like.  So far, it has worked pretty well.  What I did tonight was his favorite, pasta with meat sauce, but with an upgrade (in my opinion).  Upgrade meaning that the sauce isn't Ragu and simmers for over an hour instead of being zapped in the microwave for 20 seconds (the pasta also isn't angel hair and the meat sauce involves more than just ground beef).  But if it makes him happy, he can eat pasta with meat sauce the way he wants, I just thought we should change it up.

Well, the bar exam is finally done!  I finished it...and survived.  Hopefully I passed and will never have to deal with it again.  It was extremely difficult and the entire process was pretty grueling.  I came home and decided to make a cocktail, as promised in my last post.  This cocktail was so light and refreshing but needed a fun name.  I know I'm done with the bar, but does that mean I have to stop making dumb law school jokes and puns? NO? Fantastic!

I know, I know.  The poll on my Facebook page indicates that my next post should be a pasta dish.  And yes, I know that making a Greek Salad with watermelon already *is* twisting it, but I couldn't resist (nor could I think of a better title).  However, I have a fridge full of watermelon cubes, it's summer, I love cheese, and I think we should all celebrate the fact that I have miraculously kept my fresh herbs alive (for the most part) throughout the entire time I've been studying for the Bar Exam.  I'll pause for a small applause.... nothing? Okay let's move on...
