Happy Easter weekend everyone!  I hope you are all enjoying your weekends!  I got a long weekend off from work, which I'm fully enjoying as a relaxing 3 days and doing pretty much as little as possible.  Sometimes you just have to recharge ya know?  Anyway, I made this rack of lamb a few nights ago and thought I would share it with you in the event that you haven't decided what to make for Easter dinner yet.
 
 
Remember when I told you about my New Year's Resolutions?  And how my friend Marnely from Cooking with Books and I had made a resolution to cook a live lobster (after humanely killing it, of course)?  Well, we set a deadline of end of January to do so, so I needed to find a live lobster ASAP.

I didn't even know where to find a live lobster, so I performed a google search and found a great lobster company out of Maine, Simply Lobsters.  I worked with Don, who was an absolute joy to work with.  He was so quick to respond to my email and sent me a lobster to review via overnight shipping.  I spoke to him at 9am on Wednesday and by 9am the next morning there was a fresh 3lb. lobster from Maine sitting at my front door (carefully wrapped up of course!)!  Keep reading to see how you can win the giveaway of two 1.65 lb lobsters for Valentine's Day! 

The lobster arrived alive, as it should be, and was carefully packaged with its claws wrapped in rubber bands (so it didn't attack me!).  Here's a sneak peak at the whole process:
 
 
Wow.  I'm astonished how long it has been since I have posted.  I have been so insanely busy that I barely have time to breathe, let alone cook and then BLOG about it.  Sometimes I just don't have the energy but usually it's more just because I'm not even at my computer.  So usually on days like that I just want to be able to come home and whip up something fast and simple.  I have made these turkey burgers about 4-5 times and I love them every time.  I started making them as a healthy alternative to a beef burger and also decided to make them sans bun!  I really like them and I think you will too!  So make some for yourself on a busy weeknight or even on a relaxed Sunday, but let me know how you like them!

I made this pizza like 3 months ago and have just now posted about it.  Jeez what is wrong with me?  I should have told you all about this earlier.  When I made this, I had just returned from my grandmother's funeral and I was in the midst of studying for the Bar Exam so I didn't post it as soon as I should have and then all these other exciting recipes distracted me.  Truth be told, I thought the pizza was a bit rich and I wasn't sure if I would love it enough to share.  I think (as you will see from the verdict) that this would be better served as an appetizer for a group of people and not as a main course for one person.  It was delicious and flavorful.  I knew I wanted to combine goat cheese and figs and added the onions as a little bit of an extra oomph.  I went off of the recipe from Smitten Kitchen for Ricotta and Onion Pizza to make the recipe and then added my own flare.  It doesn't look all that pretty but don't judge a book by it's cover (or in this case, a pizza by it's dark caramelized onions!)... When I was a kid, one of my au pairs, Anna, was from Sweden.  She used to make these phenomenal Swedish meatballs for me and I have been itching to cook these ever since I launched this blog.  Whenever I see Swedish meatballs in restaurants, however, they are meatballs covered in gravy... definitely not the way Anna used to make them.  she and I are still quite close and so I finally asked her if I could have the recipe.  She sent me a link to a general recipe and gave me some suggestions as to substitutions.  She used to serve these with mashed potatoes but Matt isn't too wild about mashed potatoes so I decided to bake them in the oven in "coins".  They were crispy and delicious, but some mashed potatoes would have also been a nice addition as well (you could also do both!).  So here they are: real Swedish Meatballs!

Yesterday was Matt's birthday.  I won't tell you how old he is, but I will tell you that one of his absolute favorite meals is spaghetti with meat sauce.  He makes it multiple times per week.  Truth be told, this is actually why I started cooking.  I don't like to eat the same thing over and over again and I thought I could find new things that he would like.  So far, it has worked pretty well.  What I did tonight was his favorite, pasta with meat sauce, but with an upgrade (in my opinion).  Upgrade meaning that the sauce isn't Ragu and simmers for over an hour instead of being zapped in the microwave for 20 seconds (the pasta also isn't angel hair and the meat sauce involves more than just ground beef).  But if it makes him happy, he can eat pasta with meat sauce the way he wants, I just thought we should change it up.
