Meatball Recipe adapted from Gretchen Cooks (Recipe for Potato coins follow the meatball recipe):
When I was a kid, one of my au pairs, Anna, was from Sweden. She used to make these phenomenal Swedish meatballs for me and I have been itching to cook these ever since I launched this blog. Whenever I see Swedish meatballs in restaurants, however, they are meatballs covered in gravy... definitely not the way Anna used to make them. she and I are still quite close and so I finally asked her if I could have the recipe. She sent me a link to a general recipe and gave me some suggestions as to substitutions. She used to serve these with mashed potatoes but Matt isn't too wild about mashed potatoes so I decided to bake them in the oven in "coins". They were crispy and delicious, but some mashed potatoes would have also been a nice addition as well (you could also do both!). So here they are: real Swedish Meatballs!
Meatball Recipe adapted from Gretchen Cooks (Recipe for Potato coins follow the meatball recipe): 10 Comments 7 links is a game that is floating round the blogosphere. I've been tagged so I'm taking my turn. There are seven categories to link a post, then you tag 5 blogger friends and they take their turn. I was tagged by my friend Cassie at Bake Your Day. 1. Most Beautiful: Pappardelle with Italian Meat Sauce 2. Most Popular: Frozen Nutella Encrusted Frozen Bananas This post came by accident (I swear). What happened was simple: I made this for dessert one night because I wanted something rich but also light at the same time. I took this picture and posted it on Instagram (which if you don't have, you may want to get because it is fantastic). The picture received a lot of comments requesting the recipe and so I posted it on here. It has received the most views of any item on my blog--quite a surprise for something made by accident! 3. Most Controversial: Potato Bacon Okay this isn't exactly "controversial" but I'm not really a controversial person (at least as far as my food blog is concerned). This is really only controversial in that it's called "bacon" but it has nothing to do with pig and is really a vegetarian item. 4. Most Helpful: American Flag Cake (with Instructional Video) This is the only instructional video I have made and so it would probably be the most helpful. I definitely want to make more instructional videos though so stay tuned! 5. Surprisingly Successful: Simple Carrot Salad 6. Post that didn't get the attention that it deserved: Panko Heirloom Tomatoes with Caprese and a Boiled "Poached" Egg This was one of my first recipes and I think that may be why it didn't receive as much attention (I was a newbie...who would listen to me??) :-) However, don't overlook this gem. It's a simple meal that can be made relatively quickly and made a fantastic brunch meal. 7. Post that you are most proud of: A Pie for Mikey I am the most proud of this post because I was so proud to be a part of such a loving community. Read more on this post to find out how absolutely incredible the food blogging community is. This group of people is one of the most supportive communities out there (if not the most!) I feel honored to be a part of it. There are 2 rules. 1 link per category. And to tag 5 other bloggers! Tag you're it! 1. Chef Pandita 2. Orgasmic Chef 3. Tastes Better with Friends 4. More Thyme Than Dough 5. La Fuji Mama I am oftentimes amazed at the ability of social networks to bring people together. Just a few months ago I decided to launch this blog and join twitter. I discovered not only a slew of amazing food blogs to drool over but also some incredible twitter friends. You may laugh at my usage of "friends" but that's what they feel like to me. When my grandmother passed away, I had countless tweets with kind words and the same was true when I took the bar exam. I received at least as many "good luck" tweets as I did real life comments.
Today, food bloggers around the world are gathering together to make Peanut Butter Pies. Why? Because one of our own has suffered a tremendous loss. While I do not personally "know" Jennifer (Jennie) Perillo, I follow her blog, In Jennie's Kitchen in my RSS feed and therefore, I feel as if I know her in a way. We are connected, even if through a love of food. This past week, Jennie suffered a kind of loss I don't even want to imagine. Her husband passed away suddenly of a heart attack. Jennie posted a beautiful video of him dancing with his daughter, and you can just see what kind of a man he is. He reminded me of my father in that video...the one who adores his daughters. Yesterday was Matt's birthday. I won't tell you how old he is, but I will tell you that one of his absolute favorite meals is spaghetti with meat sauce. He makes it multiple times per week. Truth be told, this is actually why I started cooking. I don't like to eat the same thing over and over again and I thought I could find new things that he would like. So far, it has worked pretty well. What I did tonight was his favorite, pasta with meat sauce, but with an upgrade (in my opinion). Upgrade meaning that the sauce isn't Ragu and simmers for over an hour instead of being zapped in the microwave for 20 seconds (the pasta also isn't angel hair and the meat sauce involves more than just ground beef). But if it makes him happy, he can eat pasta with meat sauce the way he wants, I just thought we should change it up.
